Another simple staple on the holiday table.  The star of this dish is the squash.  Mom used to stay that you have to “cook it in it’s own water,” so just put the squash in a pan, add butter, grab a wood spoon, and stand by.  This goes well with turkey, chicken, and Mom’s favorite:  a roast.  Bonus:  it reheats perfectly, so you can make it ahead of time!

Ingredients

  • I Butternut Squash, peeled and cubed
  • 1 stick of butter
  • Salt to taste

Instructions

  1. Place the butternut squash in a large pan, such as a stock pot. Cut the butter into little pieces and add to the squash.
  2. Cook squash on medium heat with the lid on the pan. The squash will start to “water” and cook. Check the squash regularly (every few minutes) and stir with a wooden spoon until the squash is tender, about 25 minutes.
  3. When the squash is tender, mash it with the wooden smooth, then stir it until it is somewhat smooth, but still has texture.
  4. Serve immediately or reheat on the stove just before serving. Should be served hot.
