Sugo Crudo (Raw Tomato Basil Sauce)
Ingredients
- 6-8 small/medium very ripe tomatoes
- 1/4 cup fresh parsley, chopped
- 15-20 fresh basil leaves, chopped
- 1 to 3 (depending on taste) cloves of garlic, chopped
- 1/2½cup of Extra Virgin Olive Oil
- Salt and Pepper to taste
- Parmigiano cheese, shredded or grated, to taste
Instructions
- Peel tomatoes (drop in boiling water for 20 to 40 seconds first, if necessary), then cut each tomato in half, and remove and discard seeds and juice.
- Finely chop tomatoes, but do not crush them, and place in a glass or ceramic bowl.
- Add the rest if the ingredients and mix well. Cover and refrigerate for 4 to 24 hours.
- Serve over just cooked hot pasta of your choice, topping with freshly shredded or grated Parmigiano cheese.
